No, not more snow from Mother Nature…she turned her wrath on me and now suffering through sore throat and associated symptoms of the common cold.  Ugh.

Not much of an appetite – for food or drink – so I know I’m sick.  But to recap the last few days;   take out and fresh citrus fruit which my body seemed to be craving.

Today, I seem to have at least a small appetite for food, so I have prepared a rack of lamb which is, at the moment, marinating in a Moroccan style seasoned marinade; olive oil, smoked paprika, cumin, ground dried ginger, garlic, cilantro.   We have an outdoor electric grill on our lanai/balcony so I believe my sous chef/husband will put on a jacket and do the grilling of the lamb.  After all, it won’t take very long – 5 or 6 minutes on each side – if that.  I’ve never timed grilling a rack of lamb – maybe I will tonight to see how accurate my guess is or how off I am!

Sous chef/husband did the essential food shopping yesterday so there is another signal that I’m not well when I forgo the food shopping experience!  But I am still shopping from the freezer/refrigerator/pantry so that will have to suffice until I get rid of these germs.   The pantry and refrigerator will aid in making the side dish/vegetable to accompany the rack of lamb; Green Couscous – no, the couscous is not colored green (although there are hues of couscous being sold). What makes it “green couscous” is the addition of chopped scallion (green part), chopped arugula or watercress; and any other chopped green that can be eaten raw.  The cooked couscous is tossed with these greens, and dressed with olive oil, red wine vinegar, salt & pepper.
